Basic Dough
- 1 cup butter softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until combined and a dough forms.
Preheat your waffle iron and spray it with non-stick spray.
Drop small scoops of dough (about a tablespoon each) onto the waffle iron.
Cook for 2-3 minutes or until golden brown and crisp.
Carefully remove the cookies and let them cool completely on a wire rack to crisp up.
Repeat until all the dough is used. Store cooled cookies in an airtight container.
