Cake Batter

  • 1 cup butter softened
  • 1 ½ cups sugar
  • 3 eggs large
  • 1 teaspoon vanilla extract
  • 1 cup pineapple juice
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch salt

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch pan.
  • In a mixing bowl, cream together softened butter and sugar until fluffy and pale.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in vanilla extract and pineapple juice until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Pour batter into the prepared pan and smooth the top.
  • Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before serving.

Notes

For extra flavor, sprinkle shredded coconut or add crushed pineapple to the batter.
