  • 1 can crushed pineapple (20 oz, drained, juice reserved)
  • 1 package instant vanilla pudding mix (3.4 oz)
  • 8 oz whipped topping (such as Cool Whip, thawed)
  • 2 cups mini marshmallows
  • 1/2 cup shredded coconut (optional, for extra texture)
  • 1/2 cup chopped pecans or walnuts (optional, for crunch)

Instructions
 

  • Drain the crushed pineapple, reserving about 1/4 cup of the juice.
  • In a large mixing bowl, combine the dry vanilla pudding mix with the drained pineapple and reserved juice. Stir until well mixed.
  • Gently fold in the whipped topping until fully combined.
  • Stir in the mini marshmallows, shredded coconut, and nuts (if using).
  • Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  • Serve chilled, garnished with additional whipped topping and a maraschino cherry if desired.

Notes

For a healthier version, use sugar-free pudding mix and light whipped topping. You can also add fresh berries for a fruity twist.
