Instructions
Drain the crushed pineapple, reserving about 1/4 cup of the juice.
In a large mixing bowl, combine the dry vanilla pudding mix with the drained pineapple and reserved juice. Stir until well mixed.
Gently fold in the whipped topping until fully combined.
Stir in the mini marshmallows, shredded coconut, and nuts (if using).
Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.
Serve chilled, garnished with additional whipped topping and a maraschino cherry if desired.
Notes
For a healthier version, use sugar-free pudding mix and light whipped topping. You can also add fresh berries for a fruity twist.
