- 2 boneless, skinless chicken breasts
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Pasta
- 8 oz pasta (fettuccine or penne)
Creamy Sauce
- 2 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese grated
- 1/2 tsp red pepper flakes
- 1/2 cup sun-dried tomatoes chopped
- 1 cup fresh spinach optional
Season the chicken breasts with Italian seasoning, salt, and black pepper.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
Remove the chicken from the skillet and let it rest for a few minutes before slicing.
Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine.
Add Parmesan cheese, red pepper flakes, and sun-dried tomatoes. Stir and let the sauce simmer for 2-3 minutes.
If using spinach, add it to the sauce and stir until wilted.
Return the sliced chicken to the skillet and let it warm in the sauce.
Toss in the cooked pasta and mix everything together until well coated with the sauce.
Serve hot, garnished with extra Parmesan cheese if desired.
