Ingredients
  

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Pasta

  • 8 oz pasta (fettuccine or penne)

Creamy Sauce

  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp red pepper flakes
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup fresh spinach optional

Instructions
 

  • Season the chicken breasts with Italian seasoning, salt, and black pepper.
  • Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  • Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  • In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine.
  • Add Parmesan cheese, red pepper flakes, and sun-dried tomatoes. Stir and let the sauce simmer for 2-3 minutes.
  • If using spinach, add it to the sauce and stir until wilted.
  • Return the sliced chicken to the skillet and let it warm in the sauce.
  • Toss in the cooked pasta and mix everything together until well coated with the sauce.
  • Serve hot, garnished with extra Parmesan cheese if desired.
