Cookie Dough

  • 2 ripe bananas mashed
  • 1 cup oat flour
  • ¼ cup honey or maple syrup
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ cup nut butter almond or peanut
  • ¼ cup dark chocolate chips optional
  • ¼ cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mash bananas in a large bowl until smooth.
  • Mix in honey or maple syrup, vanilla extract, and nut butter until combined.
  • In a separate bowl, whisk together oat flour, baking soda, and cinnamon.
  • Gradually add dry ingredients to wet mixture and stir until just combined.
  • Fold in dark chocolate chips and chopped walnuts if using.
  • Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them evenly.
  • Bake for 10-12 minutes, or until golden brown on the edges.
  • Let cookies cool for a few minutes before transferring to a wire rack.

Notes

For a vegan version, use maple syrup instead of honey and a flax egg instead of regular eggs.
