Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mash bananas in a large bowl until smooth.
Mix in honey or maple syrup, vanilla extract, and nut butter until combined.
In a separate bowl, whisk together oat flour, baking soda, and cinnamon.
Gradually add dry ingredients to wet mixture and stir until just combined.
Fold in dark chocolate chips and chopped walnuts if using.
Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them evenly.
Bake for 10-12 minutes, or until golden brown on the edges.
Let cookies cool for a few minutes before transferring to a wire rack.
Notes
For a vegan version, use maple syrup instead of honey and a flax egg instead of regular eggs.
