Ingredients
  

Main Ingredients

  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup coconut milk
  • 1/2 cup coconut oil melted
  • 1 tsp baking soda
  • 1/2 tsp salt

Optional Add-ins

  • 1/2 cup crushed pineapple drained
  • 1/2 cup shredded coconut
  • 1/4 cup chopped macadamia nuts

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, mash the bananas until smooth.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Mix the mashed bananas with eggs, coconut milk, coconut oil, and brown sugar.
  • Gradually add the dry ingredients to the wet mixture and stir until combined.
  • Fold in crushed pineapple, shredded coconut, and macadamia nuts if using.
  • Pour the batter into the greased loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, substitute part of the coconut oil with unsweetened applesauce.
