Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, mash the bananas until smooth.
In a separate bowl, whisk together flour, baking soda, and salt.
Mix the mashed bananas with eggs, coconut milk, coconut oil, and brown sugar.
Gradually add the dry ingredients to the wet mixture and stir until combined.
Fold in crushed pineapple, shredded coconut, and macadamia nuts if using.
Pour the batter into the greased loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute part of the coconut oil with unsweetened applesauce.
