- 2 pieces chicken breasts boneless, skinless
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Pasta
- 8 oz pasta fettuccine or penne
Creamy Garlic Parmesan Sauce
- 2 tbsp butter
- 4 cloves garlic minced
- 1 cup heavy whipping cream
- 1 cup parmesan cheese grated
- 1/2 cup pasta water reserved
Optional Add-ins
- 1 cup spinach chopped
- 1/2 cup sun-dried tomatoes chopped
- 1/2 cup mushrooms sliced
Season the chicken breasts with salt and black pepper.
Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden and fully cooked.
Remove the chicken from the skillet, let it rest for a few minutes, then slice into strips.
Cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
Pour in the heavy whipping cream and bring to a gentle simmer. Stir in grated parmesan cheese until smooth and creamy.
Add the cooked pasta to the skillet, tossing to coat in the sauce. Use reserved pasta water to adjust sauce consistency if needed.
Return the sliced chicken to the skillet and mix gently.
Serve hot, garnished with extra parmesan cheese and fresh parsley if desired.
