Ingredients
  

Chicken

  • 2 pieces chicken breasts boneless, skinless
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Pasta

  • 8 oz pasta fettuccine or penne

Creamy Garlic Parmesan Sauce

  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy whipping cream
  • 1 cup parmesan cheese grated
  • 1/2 cup pasta water reserved

Optional Add-ins

  • 1 cup spinach chopped
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup mushrooms sliced

Instructions
 

  • Season the chicken breasts with salt and black pepper.
  • Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden and fully cooked.
  • Remove the chicken from the skillet, let it rest for a few minutes, then slice into strips.
  • Cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  • Pour in the heavy whipping cream and bring to a gentle simmer. Stir in grated parmesan cheese until smooth and creamy.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce. Use reserved pasta water to adjust sauce consistency if needed.
  • Return the sliced chicken to the skillet and mix gently.
  • Serve hot, garnished with extra parmesan cheese and fresh parsley if desired.
