Instructions
Preheat a skillet over medium-high heat. Pat the roast dry and season generously with salt, pepper, garlic powder, and smoked paprika.
Heat olive oil in the skillet and sear the roast on all sides until browned (about 3-4 minutes per side).
Transfer the roast to a slow cooker or Dutch oven. Surround with onions, garlic, carrots, and potatoes.
Pour beef broth and Worcestershire sauce over the roast.
Cover and cook on LOW for 8 hours (or HIGH for 5-6 hours) until the meat is tender and easily shredded with a fork.
Shred the roast and serve with vegetables and juices from the pot.
Notes
For a healthier version, use lean beef and omit the Worcestershire sauce.
