  • 3-4 lb boneless beef chuck roast Well-marbled for better tenderness
  • 2 tbsp olive oil For searing
  • 2 tsp salt To taste
  • 1 tsp black pepper Freshly ground
  • 1 tsp garlic powder For added flavor
  • 1 tsp smoked paprika For a smoky taste

Vegetables and Broth

  • 1 large onion Sliced
  • 4 cloves garlic Minced
  • 4 carrots Chopped
  • 3 potatoes Diced
  • 2 cups beef broth Low sodium preferred
  • 1 tbsp Worcestershire sauce For added depth

Instructions
 

  • Preheat a skillet over medium-high heat. Pat the roast dry and season generously with salt, pepper, garlic powder, and smoked paprika.
  • Heat olive oil in the skillet and sear the roast on all sides until browned (about 3-4 minutes per side).
  • Transfer the roast to a slow cooker or Dutch oven. Surround with onions, garlic, carrots, and potatoes.
  • Pour beef broth and Worcestershire sauce over the roast.
  • Cover and cook on LOW for 8 hours (or HIGH for 5-6 hours) until the meat is tender and easily shredded with a fork.
  • Shred the roast and serve with vegetables and juices from the pot.

Notes

For a healthier version, use lean beef and omit the Worcestershire sauce.
