Banana Bread
- 3 ripe bananas mashed
- 1 1/2 cups self-rising flour
- 1 cup sugar adjust to taste
- 2 eggs room temperature
Preheat oven to 350°F (175°C). Grease a standard loaf pan.
In a mixing bowl, mash ripe bananas using a fork or potato masher until smooth but slightly lumpy.
Add sugar and eggs to the mashed bananas, whisking until well combined.
Gradually fold in the self-rising flour, mixing until just incorporated. Avoid overmixing to prevent a dense loaf.
Pour the batter into the prepared loaf pan, smoothing the top for even baking.
Bake for 45–60 minutes. Begin checking for doneness at 45 minutes by inserting a toothpick into the center. If it comes out clean, the bread is ready.
Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
